HOMEMADE EGG NOODLES

and a note about homemade food...

...For the most part, I hate non-homemade foods (just ask my hubby)!  Anytime a food can be made from scratch, my family and I will do it.  All of us - my Mom, Dad, aunt, grandma, me - feel the time should be taken to "make" the food we eat.  Now I'm not saying we should go out and milk a cow or slaughter our own pig, but you know what I mean.  The two big ones I'm obsessive about being homemade...desserts and sauce...

Cake was NOT meant to be dumped out of a box, have a few ingredients added to it and be done with it.  What IS in that box anyway?  I want to know what is in my cake.

And the biggest no no - spaghetti sauce from a jar.  Oh my goodness - that should be a sin.  Yes, some of them on the market today are very good, but even those don't compare to homemade, nor do you get to experience the wonderful aroma of the sauce simmering away all day.

Please, don't get me wrong, if you're not a cook or simply don't like to do it, fine.  But if you want to really "cook" - if you want to call yourself a "cook" - you can't just open a few boxes, cans or jars, add some water or oil or eggs and throw it all in the oven.

Also, please don't say how busy you are...I own two businesses and my entire family works 60+ hour weeks - we always find the time to make homemade meals - it's called time management.  Besides, homemade meals don't need to take hours - just ask Rachael Ray!!!!!

With all that said, I'm a carb lover!  I live on carbs!  I love potatoes and pasta and noodles and so on and on and on...

This recipe was my grandma's, and I'm pretty sure it was from her grandma, but it's really just your everyday egg dough.  It can be made in very little time, with very little fuss, with only three ingredients - and you'll never eat noodles out of a bag again!  Taste the difference...



3 cups sifted all-purpose flour
4 eggs, unbeaten
salt, to taste, if desired


Crack eggsinto bowl; set aside.

Place flour and salt, if desired, on wood board.  Make a well in center;  add eggs.  Mix together to form dough.

Roll very thin and slice into desired width to make noodles (a pizza cutter works great here).

Cook in boiling salted water for just a few minutes ? do not overcook.
